Filled with a sweet and dreamy raspberry and cheesecake filling and covered in dark chocolate, these truffles are perfect for nearly any occasion that warrants a sweet treat. Add a few pink, red, and white sprinkles to make them a Valentine’s Day treat, or simply drizzle with white or dark chocolate to make a fancy truffle the whole family will enjoy.

Ingredients Needed for Chocolate Raspberry Cheesecake Truffles
- 1 cup of dark chocolate chips – can use semi sweet or a mix of both, but it will be sweeter
- 1 cup of fresh raspberries – washed and dried
- 8 oz block of cream cheese at room temperature
- 1 tsp of vanilla extract
- 1/2 cup sugar
- 3 tablespoons of coconut flour
- 2 tables spoons of coconut oil
- OPTIONAL: Chopped nuts, sprinkles, and other baking decorations. Consider Valentine’s Day sprinkles for the perfect Valentine’s Day treat!

- Microwave-safe bowl
- Cookie scoop
- Baking sheet
- Parchment paper
- Red, white, and/or pink sprinkles

Chocolate Raspberry Cheesecake Truffles Recipe Directions
Making the Raspberry Cheese Cake Filling
1. Combine raspberries, sugar, vanilla, and cream cheese in a food processor and blend for about 30 seconds until all the ingredients are fully mixed and there are no clumps.
2. Next, add the coconut flour slowly by pulsing it in. Pulse until it is fully incorporated.
3. Put the raspberry mixture into another bowl or shallow dish, cover and refrigerate for at least 15 minutes to allow it to become firm and easier to shape. If needed, you can do this portion and “make ahead” and leave it in the fridge all day (or till the next day). It isn’t necessary, but if you are short on time, you can certainly make the raspberry cheesecake filling ahead of time.
4. After your filling is cooled and firm, line a baking sheet or platter with parchment paper.
5. Using a cookie scoop, or ice cream scoop, make small raspberry cheesecake balls by scooping out small amounts and placing them on the parchment paper pan. (You can use a spoon and shape them into a ball with your hands. It just depends on how ‘perfect’ you want them to be. You can also use cookie cutters to shape them in to hearts or any other desired shape.)
Place the cheesecake filling balls in the freezer and let them harden. It should take about 2 hours or so. This will keep the mixture firm when you dip it into the chocolate and will help the chocolate set quicker.
Preparing the Chocolate & Dipping the Truffles
Place the chocolate chips and coconut oil in a microwave-safe dish and microwave for 30 seconds and then stir. Continue to microwave in 20-30 second increments until the chocolate is completely melted and smooth.
Once the chocolate is ready, place your chilled/frozen cheesecake balls on a fork and dip them in the chocolate, then left them out and let the excess chocolate drip off, and then place them back onto the parchment paper.
After dipping a few truffle balls, add sprinkles while the chocolate is still nice and wet. Don’t let it cool or harden before adding the sprinkles or else they won’t stick. If you want to add a drizzle such as melted white chocolate or a dark chocolate drizzle for texture or decoration, then you will want to let the truffles completely cool and be set, or at least almost fully set, before adding the drizzle so that they two chocolates don’t mix.
Continue dipping your truffle balls and decorating a few at the time, until they are all finished. If the chocolate starts to harden, you can pop it back into the microwave for a few seconds as needed. If you have never made dipped truffles, it may take one or two tries to get the hang of it.
It’s important to note that as with any chocolate dipped truffle recipe, these chocolate raspberry cheesecake truffles will not be perfectly-shaped spheres. The chocolate will puddle on the bottom, and if you are like me, it may put your OCD in overdrive… just ignore it and remember, it’s all about the taste, not the shape. The ones in the image above show what happens if you don’t let the excess chocolate drip off. You can chip off the excess, no big deal, but you will wan them to be a little more tidier. Do not poke the fork into the ball, just set the ball on the fork and dip. I have also used two toothpicks, but if your cheesecake balls are not firm enough, pieces will chip off and crumble. Either way, you will get the hang of it!
Once complete and the chocolate has fully set up, remove the truffles from the parchment paper and place them on a serving dish or in a covered bowl. They are best stored in the fridge because cheesecake and raspberry flavors are usually cooled. These will last 3-4 days in the fridge… well, if there are any left, they will last 3-4 days. They usually don’t last that long around my house because they get eaten quick!
