This delicious roasted pork tenderloin recipe with garlic and herbs is perfect if you enjoy a savory pork dish. It is infused with rosemary, thyme, and sage for a perfect herb blend. It’s juicy, it’s flavorful, and easy to make.
Thanks to all of the herbs included in this recipe, you have the flexibility to omit any that you don’t like, without losing flavor. This dish pairs wonderfully with roasted or mashed potatoes and your favorite roasted vegetables. It also goes well with a salad, and just about anything else that you can think of that goes well with pork tenderloins.
Roasted Pork Tenderloin with Garlic and Herbs Recipe Ingredients:
- 1 pork tenderloin (about 1 to 1.5 pounds)
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh sage, chopped
- Salt and black pepper, to taste
- 1 tablespoon butter
- 1 tablespoon Dijon mustard for a marinade
Instructions for Roasting a Pork Tenderloin:
Prepare the Pork Tenderloin:
First, rinse the tenderloin and pat it dry with paper towels.
Next, rub the Dijon mustard all over the pork tenderloin and season the pork generously with salt and black pepper.
For best results, allow it to marinade 30 minutes up to 8 hours. This step is optional but it does tenderizes the pork tenderloin and well-worth the extra step if you have the time. Let it sit at room temperature for about 20-30 minutes before cooking.
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Garlic &Herb Mixture:
In a small bowl, combine the minced garlic, olive oil, chopped rosemary, thyme, and sage. Mix well to create a fragrant herb paste.
Sear the Pork Tenderloin:
Next, in an oven-safe skillet, heat a bit of olive oil over medium-high heat. Once the skillet is hot, sear the pork tenderloin on all sides until nicely browned. This should take about 2-3 minutes per side.
Create & Apply the Herb Mixture:
Once you have seared the tenderloin, remove it from the skillet and brush or rub the herb mixture all over.
Roast It in the Oven:
Once you have the herb mixture coasting the tenderloin, place it back in the skillet and into the preheated oven. Roast for about 15-20 minutes or until the internal temperature of the pork reaches 145°F (63°C).
Cooking times may vary based on the size of the tenderloin, so it’s essential to monitor the temperature. Remember, the pork will continue to cook and the temp will rise another 5+ degrees while resting, so be careful to not overcook it. I personally like to pull it out when it’s medium to medium-well, so that by the time it is done resting, it will be done, by not too dry.
Resting Period:
Once the pork reaches the desired internal temperature, remove it from the oven tent the pork with aluminum foil and let it rest for about 10-15 minutes (or 15-20 if you are like me and guilty of letting the time get away from you). Tenting the pork will allow the juices to redistribute throughout the meat, resulting in a juicier and more tender pork.
Allowing it the tenderloin to cool a good bit (but not be cold) before cutting it is essential to prevent it from drying out. Resist the urge to cut into it, sample it, pick the corner, and totally dive into it because the longer you let it set, the more juicier it will be.
(This is also why I suggest leaving the thermometer in if the temp is correct.)
Slice, Serve, & Enjoy Roasted Pork Tenderloin with Garlic & Herbs
After the resting period, slice the roasted pork tenderloin into medallions. You can serve it with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
Optional Pan Sauce:
While the pork is resting, you can deglaze the skillet with a bit of chicken or vegetable broth and a tablespoon of butter to make a simple pan sauce. Simply bring the liquids to a simmer, and use a whisk (or other utensil) to loosen up all those browned, flavorful bits of pork and herbs in the skillet. Let it reduce slightly and serve it alongside the pork. If you want a slightly thicker pan sauce, you can mix in a teaspoon of corn starch with a little cool water or broth, and then pour it into the simmering sauce and stir quickly.
